If you have a high carbohydrate allowance, you can add in moderate amounts of these vegetables, still insuring you donโt go over your carb limit.
Cauliflower Fried Rice

Ingredients
- ย 12ย ozย cauliflower rice
- ย 2ย tbspย olive oil
- ย ยฝย tbspย sesame oil
- 2ย tbspย green onions(optional: you can swap for scallions)
- ย 1ย tbspย minced garlic
- ย 1ย egg
- ย 1ย tbspย coconut aminos
- ย salt to taste
- ย optional: fresh parsley and lemon
- ย serve alone or with a protein source(we served with lemon pepper chicken)
Directions
- Heat the 2 tbsp of olive oil in a large skillet over medium-high heat.
- Add in the minced garlic and cook for 1-2 minutes.
- Add in the cauliflower rice and any additional seasonings.
- Fry until the cauliflower rice becomes slightly golden brown.
- Scramble the egg and pour into the fried cauliflower rice.
- Continue stirring as the egg cooks.
- Once the scrambled egg has cooked, stir in the coconut aminos and sesame oil.
- Top the fried cauliflower rice with the green onions and serve.
Optional: top your cauliflower fried rice with fresh parsley and a lemon wedge. Serve with your favorite protein source (like chicken or pork).
