- ย 1ย tbspย rosemary
- ย 1ย fresh thyme(or 1/2 tsp dried thyme)
- ย 1 ยฝย tspย cracked black pepper
- ย 1ย tspย salt
- ย 2ย tbspย olive oil
- ย 1ย tspย dijon mustard
- Roasted Vegetables
- ย 1 ยฝย tbspย olive oil
- ย 1ย tspย rosemary
- ย ยฝย tspย cracked black pepper
- ย ยฝย tspย sea salt
- ย 1ย medium zucchini
- ย 2ย small yellow squashes
- ย 1ย cupย cherry tomatoes (optional)
Direction
- Trim lamb and score remaining fat layer in criss-cross pattern.
- Mince garlic. Finely chop fresh rosemary and thyme. Add garlic, herbs, salt, pepper, oil, and mustard (optional) to small bowl and mix.
- Place lamb in roasting pan or baking dish. Rub herb mixture into lamb and coat thoroughly. Cover seasoned lamb and set aside 1 hour.
