Ingredients
ย 1ย large cauliflower head
ย โ ย cupย avocado oil
ย 1ย tbspย Thai red curry paste
ย 1ย tspย chili powder
ย 8ย tbspย mayonnaise, divided
ย 2ย tbspย Swerve confectioners sweetener
ย 2ย tbspย Thai chili garlic sauce
ย ยฝย tspย garlic powder
ย 2ย tbspย plain yogurt
ย 2ย tbspย Sriracha sauce, divided
Directions
- Preheat the oven at 400ยฐF.
- Wash the head of cauliflower and pat it dry. Place on an ungreased baking sheet and set aside.
- In a small bowl, combine the avocado oil, Thai red curry paste, and chili powder.
Evenly coat the cauliflower head with the mixture, and place in the oven for 25 minutes. - In a medium bowl combine 4 tablespoons of the mayonnaise, Swerve confectioners sweetener, Thai chili garlic sauce, garlic powder, and yogurt.
- Remove the cauliflower from the oven and pour the sauce over the cauliflower. Continue to cook for an additional 15 minutes.
- In a new bowl, mix the rest of the mayonnaise and half of the Sriracha sauce.
- Fill a pastry piping bag with the mixture. If you donโt have piping bag, place in a plastic sandwich bag and cut the corner. Remove the cauliflower from the oven and pipe the sauce over the cauliflower.
- Drizzle the rest of the sriracha sauce over the cauliflower and garnish with cilantro.
